Banana Chocolate Chip Muffins for Labor Day Weekend

I have long resisted being in the kitchen. Over the years, I would much rather be doing anything besides cooking.  When I was young and in college, it was cereal, or quesadillas, or anything easy.  In our early years of marriage, I just tried to avoid the kitchen – unless I was plating up some good ol’ take out food! When the kids were younger, I knew I had to learn and make it a regular thing, but I went down kicking and screaming.

Last year, we moved from the suburbs to the country (about 25 minutes from the nearest Publix) and I surrendered to my new kitchen.  I began to stock up on food and learn a whole new list of meals to make.  My son rewarded me with exaggerated praise and “mmmmm’s” as did my husband.  My daughter, however has recently joined me in the kitchen and that has finally won me over!

Ava loves to cook, bake, stir, crack the eggs, read the directions, and of course lick the bowl.  Her little seven year-old enthusiasm is contagious.  We turn on the soundtrack to “Descendants” and have a party in the kitchen.  She has fully mastered this recipe and can nearly make it without my help.  I have to put the muscle into the banana mashing, get out the heavy containers of sugar and flour, and put them in the oven, but she does the rest!

Banana Chocolate Chip Muffins

Serves: 12 muffins
Easy banana chocolate chip muffins so yummy the kids will always want them for breakfast!
Ingredients
  • 4 ripe (mushy) bananas
  • 1/3 cup of melted butter
  • 1 egg
  • 1 tsp vanilla
  • 3/4 cups sugar
  • 1 tsp baking soda
  • pinch of salt
  • 1 1/2 cups flour
  • 1 cup of semi-sweet chocolate chips
Instructions
  1. Pre-heat the oven to 350 degrees. Line a 12 cup muffin pan with paper liners.
  2. Peel the bananas and put them in a large bowl with the melted butter. Mash the butter and bananas until most of the lumps are gone. (takes a little muscle and work) Once the bananas are smooth, add the egg, vanilla and sugar and mix in completely. Pour in the flour a little at at time and stir and continue adding until completely mixed into the batter. Add the chocolate chips and stir into the muffin mix.
  3. Divide into the muffin tin until all the batter is used up. Bake in the 350 degree oven for 25-30 min or until the muffins have a golden brown on top. Enjoy!
